Guide for Authors

 

The Society of Food Science and Technology edits “Egyptian Journal of Food Science", two times a year. The Editorial Secretary will consider for publication in the journal manuscripts which describe original work not previously published and, if accepted, must not be published in any other journal.


Two classes of manuscripts are recognized:
1. Research articles: Research articles should present the results of an original research study. These manuscripts should describe how the research project was conducted and provide a thorough analysis of the results of the project. Although no limits on length are imposed, authors are expected to report the findings as concisely as possible. The manuscripts should be subdivided with the following subheadings: Abstract, Key words, Abstract, Key words, Introduction, Material and methods, Results and discussion, Conclusion, Acknowledgments (Optional) and References. These items should not be numbered.
2. Review articles: Review papers should provide a synthesis of existing knowledge and give new insights or concepts not previously presented in the literature, or at least not with the same level of detail.


General Instructions
The formatting and other conventions that are to be followed are listed below:

- Manuscripts can be submitted to the Editor through the website of the EJFS (https://ejfs.journals.ekb.eg/). Only electronic submissions are accepted, the preferred format is a single MS Word file (double spaced) containing all text, tables and figures with cover letter and names of two potential reviewers. The following information must be provided for each manuscript submitted: the corresponding author with an email address and other contact information; complete listing of all authors and affiliations; manuscript title; and a listing of all individuals acknowledged in the manuscript. All manuscripts are subject to plagiarize screenings upon submission. Manuscripts will normally be published in order of acceptance by the Editors. Proofs will be sent to the corresponding author and should be returned within one week since receipt. No new material may be inserted in the text at proof stage.
- Spelling should be consistent throughout the paper and according to the Oxford Dictionary.
- Footnotes are being avoided as much as possible.
- Articles should be subdivided with the following subheadings: Abstract, Keywords, Introduction, Material and methods, Results and discussion, Conclusion, Acknowledgments (optional) and References. These items should be in bold and should not be numbered.


Title
The title of the article should be precise and brief and must not be more than 20 words. The first letter of each word should be in capital letters except conjunctions and prepositions.
For example:
Biological Activities of Dihydroquercetin and Its Effect on the Oxidative Stability of Butter Oil
Running title
A short title ‘running title’ with a maximum of 6-7 words not mentioned in the title should also be provided.
Authors' affiliation addresses
Please write the full first name and family name of each author and verify the accuracy of writing all the names clearly, and write the middle name(s) briefly. Present the authors' affiliation addresses (where the actual work was done) below the names. Indicate all affiliations with a lowercase superscript letter immediately after the author's name and in front of the appropriate address. Provide the full postal address of each affiliation, including the country name and address of each author.

Manuscript

Manuscript should have 12 to 20 pages typed, including figures, tables and references. They should be written in space 1.5 lines. The work should be edited in Word, or compatible, using Times New Roman font, size 12. The work should be formatted in A4 and the lower, upper, right and left margins should be 2.5 cm.
The International System (SI) of measures should be adopted. Equations should be edited using Word's Equation Built. The variables must be identified after the equation.

Tables and Figures

Tables and figures should appear in the manuscript as near as possible to the place where they are referred to in the text. Figures must be submit as tiff or eps with a resolution of 300 DPI for photos and 600 DPI for line drawings and graphs.

Abstract
Abstracts, up to 250 words, should contain brief information on the aims of the research, experimental material, results and conclusion.
Key words, up to six, shall be added at the end of the abstracts and should not include words found in the title

Introduction

State the objectives of the work and provide an adequate background, avoiding a detailed literature survey or a summary of the results.

Material and methods
Provide sufficient detail to allow the work to be reproduced, with details of supplier and catalogue number when appropriate. Methods already published should be indicated by a reference: only relevant modifications should be described.

Results and Discussion
Results should be clear and concise. Discussion should explore the significance of the results of the work, not repeat them. A combined Results and Discussion section is often appropriate. Avoid extensive citations and discussion of published literature.

Conclusion
The main conclusions of the study may be presented in a short (3-5 sentences).

References
References are to be identified in the text by the author's name and year of publication. At the end of the paper, each must be listed alphabetically at the end of the paper in the form as follows: Periodicals – names and initials of all the authors, year of publication, title of the paper, journal title, the volume number as well as the page numbers. Books – names and initials of all the authors, name’s of editors, the year of publication, the title of the book (underlined) and the page number or the total number pages of the book, the publisher's name and place of publication. Patents – the name of the application, the title, the country, patent number or application number, the year of publication. Thesis – the title of thesis should also be underlined with an indication whether its material was published or not. References in languages not employing Latin or Arabic characters should be transcribed phonetically employing latin characters followed by its correct translation in English.

Proofs
Proofs should be checked by the author against the manuscript. It is undesirable to make any change in the original text.


Notes for payment

All articles published in the EJFS are Open Access and freely available online, immediately upon publication. Upon receiving the acceptance for publication letter, a sum of L.E 300 is delivered manually to the National Information and Documentation Centre, El-Tahrir St., Dokki, Giza.
